The Best Sugar Cookies for Every-Bunny

Easter is upon us, which means it’s cookie decorating season! We’ve got a tasty and egg-cellent Easter Sugar Cookie recipe for you all to enjoy. These adorable Easter themed cookies can be enjoyed fresh out of the oven or can be cooled and decorated with delicious royal icing (see recipe below).

  • 1 ½ cups butter, softened
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Royal Icing

  • 3 ounces pasteurized egg whites
  • 1 teaspoon vanilla extract
  • 4 cups confectioners’ sugar
  • Food coloring of your choice

  1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least an hour (or overnight).
  2. Preheat the oven to 400 degrees F (200 degrees C). Roll out the dough on a floured surface ¼ to ½ inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
  3. Bake for 6 to 8 minutes in a preheated oven. Cool completely.
  4. While the cookies cool, let’s make the royal icing - in a large bowl combine eggs whites and vanilla extract until frothy.
  5. Add the confectioners’ sugar and mix until sugar is incorporated and mixture forms stiff, glossy peaks. This should take approximately 5 to 7 minutes at a high speed on a standard mixer.
  6. Add food colouring and transfer icing to a piping bag and pipe as desired.
